Red Noodle Pole Bean

Vigna unguiculata subsp. sesquipedalis

Certified Organic

Grown on Our Farm

Prolific long red beans make the best stir fry.

Ever try making stir fried green beans just like your favorite Chinese restaurant but they don't turn out quite right? Chances are you were using Phaseolus vulgaris, the common garden bean in a preparation meant for Noodle Beans, Vigna unguiculata. This legume has long, slender pods that reach about 18" long (Sesquipedalis means half-yard). When picked young and slender, they can be prepared into a variety of delectable stir-fried dishes. Just don't steam them! They need frying to preserve their moisture and crisp up their skin.

Growing instructions
Direct sow once soil has warmed and there is no chance of frost. Provide sturdy support: noodle beans grow vigorously and climb tall (8' or more). After plants flower, watch closely: beans swell quickly and should be harvested when pencil thin. Keep harvesting to increase pod production. Very frost sensitive: best planted 100+ days before first fall frost.

I grew red noodle beans last year (2023). Every seed germinated, they were prolific plants with lots of beans that continued all summer. The pretty little flowers are similar to sweet peas. Thank you so much!

I planted these along side standard green yard-longs... I think maybe I needed more room between plants? This year, here on Long Island NY, ALL my seeds were slow to sprout and I had to sow them multiple times.
However, the few Red Noodle Beans that DID take off were delicious!
